Easy-Peasy Lentil and Bean Chilli You will need: A pot Stirry thing, eg wooden spoon Chopping facilities A sieve Slate/plate and eating implements 30min to put it together, 10min to enjoy! (this one is good to make in advance, the flavours bind over time) A little olive oil 1x onion chopped 1x large red or yellow pepper seeded, and chopped 2x garlic cloves finely chopped 1x chilli finely chopped (with out without seeds, your choice) 1tsp ground coriander Salt and pepper 1x can green lentils 1x can red kidney beans 1x can chopped tomatoes Yogurt and coriander to serve (optional) Rice, flat bread, or little gem lettuce to eat it on/with/in. Method: Fry your chopped onion, pepper, garlic, and chilli in your pot with the olive oil. Stick it on low-med heat, and cover, stirring occasionally to stop them sticking. Cook until veg are soft, (about 10min) Rinse the lentils and kidney beans. Tip them in, along with the tomatoes and the ground coriander. Mix well and season with salt and pepper. Let simmer for 10min or so. Eat whenever you like, it's so healthy and yummy. High in protein, and low in fat! Enjoy!
