I'll put an egg on anything! A good option for a hot breakfast without bread. Stir fry kale, onions, tomato and avocado, topped with poached eggs. Lovely! I sometimes add cumin seeds, tastes great! Try it out!

Turkish Bean Salad is a winner! 2 tins of Cannellini beans, 2 thinly sliced red onions, 1-2 tsp dried chilli flakes, big bunch of flat leaf parsley, 2 garlic cloves minced, juice of 1-2 lemons, 3 tbsp. tahini, 3 tbsp. olive oil, 2 tbsp. red wine vinegar, sea salt, fresh black pepper. Whisk together your lemon, oil, tahini, garlic, to make a thick dressing. Toss with other ingredients, enjoy!

Healthy and hearty! Perfect for winter, and great on it's own, with roti, or rice! Fry up 2 diced onions, then add 3-5 chopped garlic cloves (to taste), a tbsp. of fresh grated ginger, 1 sliced red chilli, seeds removed. Cook for a few min, then add 1tsp each of cumin, mustard and coriander seeds, 2tsp ground turmeric, 1tsp garam masala for 1 min to toast. Add 400g rinsed red lentils and 1lt vegetable stock. Stir, and leave on low for about 30min, or until lentils cooked and stock reduced. Add lemon juice, salt and pepper to taste.

Currently my favorite breakfast! Soft boil an egg. I time mine 10min from cold water, comes out perfect! Make yourself a small portion of porridge with oats and water/milk of your choice. A little thick, to support your toppings. Put the shelled egg on top of your porridge, add half a chopped avocado and a sprinkle of seeds if you'd like a little crunch. Salt and pepper to taste. Or, swap egg/seeds for bacon like the one on the left. They're both delicious!

Kale is great in salad. You don't have to cook it either! Just wash it, and dress it with a little oil, lemon, and sea salt. Then squeeze it! It can take a good hard squeeze, so don't be shy! Leave it to sit whilst you get your other ingredients ready. This one has sliced red onion, olives, a little avocado, a tomato, a chopped fig, and a little crumbled feta. So good!!

2 eggs 1 heaped tablespoon peanut butter 1 heaped tablespoon full fat yoghurt 1/4 teaspoon baking soda 1/4 teaspoon salt 1/2 teaspoon vanilla extract 1 teaspoon real maple syrup Blitz in a blender Stir in a handful of coco nibs Pan fry in coconut oil I topped mine with fresh blueberries, a spoon of yoghurt, and a drizzle of warm maple syrup... Serves a hungry one (me) or a not-so hungry two ☺️
