Roasted Sea-bass and BroccoliYou will need:An ovenA baking tray (I line mine with baking paper)Tossing equipment eg spatulas or wooden spoonsChopping facilitiesClean tea towelSlate/plate and eating implements20min to cook, 10min to eatA little olive oilA sea-bassA head of broccoliHalf a limeA chilli1-2 garlic clovesSzechuan PepperSalt and pepperMethod:Pre-heat your oven to 225'c whilst you're prepping. Wash your broccoli and dry well with the towel. Cut into small florets. Put on your baking sheet and toss in a little olive oil, salt and pepper. Chop your garlic and chilli (seeds optional) Put a little olive oil on your hands and rub over the fish. Score the side. Stuff the cuts, and fish with the chilli and garlic. Slice your lime and wedge into the cuts. Sprinkle with szechuan pepper. Put the fish on the same sheet as the broccoli. Stick it in the oven for 10min. Take out, and toss the veg. Put back in for another 10min. Eat.
