Simple Salmon Cajun Style with Tomato and Smashed AvocadoYou will need:Non-stick panLow-cal cooking spray or drizzle of olive oilChopping and smashing facilitiesPlate/slate15 minutes to make it, 5 minutes to eat it.1 salmon filletCajun seasoning1/2 avocado2 tomatoes or few cherry tomatoes choppedA little spring onion/red onion/any sweet onion finely slicedLemon/lime juiceSalt and pepper to tasteMethod:Cover your salmon fillet with Cajun seasoning, pressing it in to make it stick to the fish.Heat your preferred cooking lubricant in your non-stick pan to a medium heat.Add salmon, skin down. Move it about a bit, makes sure the skin doesn't stick.Let it cook half way through, you can see the salmon cooking, as it changes colour to a lighter pink. Once half way done, flip it. sear all sides, and turn the heat off. Leaving the salmon skin side up, allow the remaining heat in the pan cook the fish through.Whilst this is happening, smash your avocado in a bowl.Add lemon/lime juice and stir. Add your chopped tomatoes, onion, salt and pepper. Stir again.Serve with the salmon, once it's cooked.
